Summer Sides

Do you want to help out in the kitchen? Make some tasty side dishes for you, family and friends to enjoy?

Here are two of my favourite dishes to make in the summer and they are very simple recipes for you to try!





Tomatoes with a Tangy Feta Dip

1. Cut up a variety of different tomatoes, shapes and sizes. (Get an adult to help with this step)

 The amount depends on how many mouths you are feeding. Roughly two small boxes of cherry tomatoes for 4 people.

2. Put the tomatoes in a strainer over a bowl and sprinkle with salt to enhance the flavour and release the water. Allow the tomatoes to sit for 20minutes or longer.

3. For the dip you will need a half a block of feta cheese, 1 cup of greek yogurt, the juice of half a lemon,a drizzle of olive oil, salt and pepper. If you like spicy then add some chilli flakes (in my opinion it tastes amazing with a little spice). You can also add 1 clove of garlic if you desire. Pop everything into a blender and blend until you get a creamy consistency.

4. Shake the tomatoes.

5.Add the dip to your favourite crusty bread, top with the tomatoes and enjoy!!!

This dip goes great on sandwiches, as a dressing for a salad or whatever way you want to eat it.


Courgette Salad 

1. Top and tail two courgettes and slice them length ways into 5-6 slices. (Get an adult to help with this step)

2. Toast 1-2 handfuls of flaked almonds in a dry pan until golden.

2. Brush the courgette on both sides with some olive oil and cook on a medium-high heat on griddle pan or a BBQ until golden on both sides. (Get an adult to help with this step)

3. Add the courgette to a bowl with the lemon juice, a quarter block of crumbled feta cheese, mint leaves and the toasted flaked almonds. 

Enjoy this as a side dish with fish or meat or simply on its own!

This recipe serves around 4 people as a side dish.
